Daisy wedding cake
This wedding cake I did for a friend who was getting married in St. Paul Alberta, which is a long way from home! She did not want a 'real' cake, but insisted on having a fake cake covered in fondant and flowers. I used fresh flowers & willow twiggs that matched her bouquets. The 160 or so mini cupcakes (in 4 flavors) were covered simply in white chocolate buttercream & fondant daisies. Since the cake was fake, I thought it would be fairly easy to cover with icing (to make the fonant stick) & fondant, but it proved to be more difficult than I had anticipated! Overall, I think it turned out great, and was just what she wanted.
